Fish Tuesday with Sea bass fricasee!! Another classic @funkygourmetrestaurant dish at home! Enjoy! _______________________________ Ψάρι fricassee Υλικά • 110 γρ. αβγό, ολόκληρο • 20 γρ. χυμός λεμονιού, σουρωμένος • 250 γρ. ζωμός ψαριού • 3,1 γρ. FDS (fleur desel= ανθός αλατιού • 0,6 γρ. λευκό πιπέρι, τριμμένο • 10 γρ. άνηθος, ψιλοκομμένος Διαδικασία 1. Χτυπάμε τα αβγά σε ένα μεταλλικό μπολ. 2. Σε ένα άλλο μπολ βάζουμε το χυμό λεμονιού και το ακουμπάμε πάνω σε πάγο. 3. Βάζουμε σε μια κατσαρόλα τον ζωμό, το αλάτι και το πιπέρι και τον φέρνουμε σε βρασμό. Στη συνέχεια τον προσθέτουμε σιγά σιγά στα αβγά ανακατεύοντας γρήγορα. 4. Μεταφέρουμε το μπολ σε μπεν μαρί και φέρνουμε το μείγμα στους 79℃ ανακατεύοντας συνεχώς. Απομακρύνουμε από την φωτιά αμέσως και σουρώνουμε στο μπολ με τον χυμό λεμονιού. Ανακατεύουμε μέχρι να ομογενοποιηθεί. 5. Προσθέτουμε τον άνηθο και αποθηκεύουμε σε ένα πλαστικό δοχείο. Για το φρικασέ θα χρειαστούμε: Υλικά • 80γρ. βούτυρο, κομμένο σε κυβάκια • 30γρ. ελαιόλαδο • 120γρ. κρεμμύδι ξερό, ψιλοκομμένο • 120γρ. φρέσκο κρεμμυδάκι κομμένο σε κυβάκια • 300γρ. μαρούλι iceberg, ψιλοκομμένο • 10γρ. Αλάτι • 20 γρ. χυμός λεμόνι, σουρωμένος • 1 γρ. λευκό πιπέρι, τριμμένο • 30γρ. άνηθος ψιλοκομμένος • 200γρ. σάλτσα αυγολέμονο Διαδικασία 1. Σε μια κατσαρόλα βάζουμε το βούτυρο και το ελαιόλαδο και σοτάρουμε τα κρεμμύδια. Μόλις μαραθούν προσθέτουμε το μαρούλι, το σπανάκι και το αλάτι. Σοτάρουμε μέχρι να μαραθούν τα χόρτα. 2. Όταν είναι έτοιμα τα μεταφέρουμε σε ένα μπολ και προσθέτουμε το χυμό λεμονιού, το πιπέρι, τον άνηθο και τη σάλτσα αυγολέμονο. 3. Ανακατεύουμε καλά δοκιμάζουμε και σερβίρουμε. Για να σερβίρουμε το ψάρι fricassee Υλικά • 150 γρ. ψάρι, φιλέτο • 100 γρ. σάλτσα αυγολέμονο (από τη συνταγή πιο πάνω) • 30 γρ. Μυρώνι • Λίγο ξύσμα λεμονιού • άνηθος, μόνο τις κορυφές Διαδικασία 1. Ψήνουμε το ψάρι στη σχάρα (chargrill) ή σε ένα τηγάνι με ελαιόλαδο. 2. Ζεσταίνουμε τη σάλτσα αυγολέμονο σε ένα μικρό κατσαρολάκι και τη σερβίρουμε σε ένα ζεστό πιάτο. 3. Από πάνω τοποθετούμε το φιλέτο ψαριού. 4. Πασπαλίζουμε με ξύσμα λεμονιού, χυμό λεμονιού και άνηθο. Καλή επιτυχία! - @funkygourmetrestaurant on Instagram

QUICK & EASY CHICKEN RISOTTO FOR UNDER $15 😍 Ingredients: - 500g chicken breast - 1 cup of Arborio rice - 1/2 litre of chicken stock - 2 red onions - 1 clove of garlic - A handful of mushrooms - A handful of baby spinach leaves - Salt & pepper to taste - Oil for cooking - Parmesan cheese (optional) Method: - Start by cooking onions in a deep pan with oil and chicken breast and mushrooms, adding some salt - Once the chicken has gone brown, stir in garlic (crushed or grated) - Add rice and stir to cover in oil, add stock & then bring to boil. - Then add in spinach leaves - Cover, reduce to low heat and simmer for 10-12 minutes, or until stock is absorbed.- Add in cheese at the end if you prefer, can be eaten with or without. * serves 4* - @iga_werribee on Instagram

The inspiration for this came straight out of @ottolenghi new flavour cookbook. I usually use sugar snap peas an addition to any dish, without giving it much thought- but grilled with some lemon, takes it to a whole new level. Greek yoghurt with saffron oil, crispy onion and garlic, dried barberries and grilled sugar snap peas dressed with lemon, olive oil, salt and pepper. Topped with pine nuts and chives. I mopped the plate. This Superfood Goddess Soup is overflowing with feel-good veggies and greens, it’s quick and easy to make, and tastes so wonderfully fresh and delicious! 🌱🙌 Ingredients: • 1 tbsp olive oil • 1 small white onion, diced • 4 cloves garlic, minced • 8 cups Kitchen Basics Vegetable Stock • 1 small head broccoli, chopped • 1 small head cauliflower, chopped • 1 (15-ounce) jar white beans • 2 teaspoons ground cumin • 1–2 teaspoons sea salt • Pinch of crushed red pepper flakes & black pepper • 6 cups baby spinach • zest and juice of 1 lemon (about 2 tbsp juice) • 1 scp of vanilla superfood protein • toppings: sliced avocado, chopped fresh cilantro, and/or toasted seeds Directions: 1) Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until softened and translucent. Stir in the garlic and sauté for an additional 1-2 minutes, stirring occasionally, until fragrant. 2) Add in the vegetable stock, broccoli, protein, cauliflower, white beans, cumin, 1 teaspoon sea salt, crushed red pepper flakes and black pepper, & stir until combined. Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover and simmer for 5-8 minutes, or until the broccoli and cauliflower are tender. Stir in the spinach and cook for 1 minutes, or until it is slightly wilted. 3) Use an immersion blender (or transfer the soup in batches to a traditional blender) to puree the soup until smooth. 4) Stir in the lemon zest & juice until combined.
