Now add maida, baking powder, butter and salt. Combine and knead to smooth dough adding water as required. Grease, cover and rest for 1-2 hours. Punch the dough and roll slightly thick using rolling pin. Now with the help of donut cutter, cut round. Allow to rest in warm place for 2 hours. Deep fry in medium hot oil to golden brown. Chocolate glaze recipe🔰 Firstly, mix 1 cup powdered sugar, ¼ cup cocoa powder, 1 tsp vanilla extract and 3 tbsp milk. Stir well till the mixture forms smooth and creamy. 🥐 Et si pour le goûter, le petit déjeuner ou le brunch on faisait des chouquettes ? En plus cest très simple ! ⬇️ Pour une 40aines de chouquettes, il faut : - 145g farine - 145g beurre demi-sel - 125ml lait - 125ml eau - 1s sucre vanillé - 4 oeufs + sucre perlé + 1 dernier oeuf battu pour dorer les chouquettes 1. Préchauffer le four à 200°C. 2. Porter à ébullition le beurre demi-sel, leau, le lait et le sachet de sucre vanillé. 3. Retirer du feu, ajouter en une fois la farine et mélanger vigoureusement 5mns environ afin que la panade (la pâte) se décolle de la casserole. 4. Ajouter un à un les 4 oeufs en faisant des frictions. ⚠️ Bien attendre que cela refroidisse avant de les incorporer sinon on risque davoir une omelette 😅 5. Sur une planche de cuisson sulfurisé, déposer vos futures chouquettes. Pour se faciliter, utiliser une poche à douille sinon une cuillère à soupe fait laffaire. 6. YAS WHERE ARE ALL MY BARCOOK FANS AT? CINNAMON APPLE BUN 🍎 Decided to try something unconventional this time. Couldn’t resist when I saw that brown sugar crumble crust lying on top of the round fluffy bun. Could already imagine the different textures of this bun having a party in my mouth. Yes, the flavours didn’t disappoint. Imagine an apple crumble muffin in a bun form, that’s it. The cinnamon taste was pronounced both in the crumble and sweet apple filling. When you bite further into the bun, you get CHUNKS of apple pieces. I mean CHUNKS. I do wish that the pieces in the generous Apple compote was stewed for a longer period of time, so the apple pieces are more tender. Still, the tangy apple notes coupled with the pleasant crunch from the brown sugar crumble was a win for me. 7/10! - @veryloafly on Instagram

Since I started working on the croissants at @to_be_frank_bakery I couldn’t help myself but feel frustrated at them. They were tasty. Like real tasty. Franco’s recipe is just really really good but I couldn’t understand why they were not reaching their maximum potential. They would not really kick in the oven so we worked on increasing the strength via a longer bulk ferment and more preferment. However we still had issues.. they could prove for hours without moving... we came to realise that there was not enough « food » available for the yeasts to feed on. Now most places would use a strong flour with added gluten and ascorbic acid. Some would add malt or bread improvers to fix this issue but at @to_be_frank_bakery they purely use organic flours and no additives. They also work with such a small amount of yeast I even wondered if maybe the solution was to increase the yeast.. Very recently I talked with @patisserie21_technologie who suggested to use rye flour, up to 3%. From the first trial we saw a huge difference. Not only we get more kick and more volume, we also get more residual sugars at the end of the fermentation. This has been a huge learning curve for me and made me understand that we do not know enough about our flours here in Australia. Surely a flour analysis with the falling number would have helped us. (@wholegrain_milling is that something you could provide ?) To all the bakers out there working without any additives and organic flours, give rye a try in your baked goods at a low percentage and let me know how you go ! It is golden and crisp, yet still soft and buttery. The texture is velvet, and the pastry peels satisfyingly into pale yellow ribbons. A flaky shell contains a myriad air pockets, with a chewy, weighty base. With such a good foundation, any added toppings or flavours are bound to succeed. This croissant encases a layer of ham and a core of slightly melted cheese. Seeded mustard is folded through the layers and the top is dusted with savoury seeds and herbs. Cream cornetto ($4.50) 📍Sant Ambroeus 1000 Madison Ave, New York, NY 10021 ⠀⠀⠀⠀⠀ I actually mistakenly purchased this thinking it was a croissant 😳 (which is how the staff referred to it!). I dont know much about cornetti, but I really liked the custard cream in this one - very fragrant, thick in texture, and not too sweet. As a whole, it was very soft and sort of floppy, and the main flavor came from the cream filling. Black sesame & magic miso caramel croissant ($5.50 plus tax) 📍Supermoon Bakehouse 120 Rivington St, New York, NY 10002 ♥️ ⠀⠀⠀⠀⠀ I’m back from Michigan, so of course I had to try the new flavors from Supermoon! I’m really glad I got this one - it’s the best I’ve had here. It’s filled with black sesame creme patisserie (light, not too sweet, present but not too strong black sesame flavor) and miso caramel (delightfully savory sweet), and the combination of flavors is really fantastic (though personally I found the caramel texture a bit thick). There wasn’t any caramel where I cut the croissant but further out from the center had more. The croissant itself had the great texture characteristic of all their croissants, and was still flaky and crisp even in the afternoon; in addition, the flavor was better than the others I’ve had here (it seemed like maybe some salt had been added?). Super job by Supermoon 😊 ⠀⠀⠀⠀⠀ (As you can probably tell from the sunny sky and melted chocolate shard, this photo is from yesterday!
