Chuales elaborados en Viesca, Coahuila. En el norte de México y sur de Estados Unidos se desarrolló una técnica de conservación para los elotes, la cual consiste en deshidratarlos al sol después de haberlos hervido o asado. Este alimento recibe diferentes nombres dependiendo la región: chuales, huachales, chacales, chicales o chicos. En México forman parte de la cocina de Jalisco, Zacatecas, Durango, Coahuila y Sonora principalmente. Los elotes cocidos se cuelgan por varios días en un tendedero hasta lograr un secado perfecto de los granos. En las casas se solían guardar las mazorcas completas ya deshidratadas y de ahí se iban desgranando los chuales según se fueran necesitando. Los granos secos se muelen ligeramente en el metate o molino de mano y se hidratan antes de cocinarse. Los chuales se consumen tradicionalmente durante la cuaresma, aunque pueden disfrutarse en cualquier tiempo. Clay, A Relative of Corn 𓆸 It’s been a while since I‘ve shared my Clay offerings on here and with all. The natural shift to dedicate my time with the land has been what my spirit has needed, and to my surprise what Clay has always been telling me. There are seasons in life when we realize our time deserves to be diversely devoted. To listen closely and better learn how to widen our optic. What I’ve been finding in the garden are new ways of navigating the system of Consumerism and Capitalism we have been programmed to feel dependent on. Clay cannot be rushed, manipulated, nor controlled. Corn sustainably becomes form over time and their nourishment is ever lasting. Over the previous few months, the Clay and the Corn have been reminding me that it’s very nature is not made to quickly and immediately satisfy the hunger of the unhealthy systems. Rather it’s a slow, windy, wet and muddy road. While Clay directs me home to my heart each time they meet my hands, tending to a business of soul and service is a humbling walk and a constant unearthing of expired, unaligned and dependent mentalities. What if instead of holding onto the mentalities, of ownership, of rapid rewards, of ‘successful’ and validated identities ~ we compost the labeling of who we are and what we do, and what we should be doing because of who we are? What if we are growing from one way into another the more we digest the lessons from Earth + Spirit, and the more we devote to the inner work of unlearning? Time is Value. So while each kernel of corn develops in the husk of who we are slowly growing into, how are we re-evaluating our true mission and service in Life in new, aligned ways? The Clay, a Mother to the Truth and Breath shows me this. The Corn, a currency of inner wealth and health tells me this. Throwing it back to my first ever glass gem corn harvest. I didn’t grow any sweet corn for eating because I had limited room in the bed I was growing in (only enough for 8 stalks), but this glass gem masterpiece made it all worth it 💯⠀ ⠀ I planted numerous varieties around the glass gem (green oxacan, blue, blood red, etc) and not knowing what color palette you’ll get makes each unhusking so exciting. - A fascinating bit of genetics for y’all! This sweet yellow corn was harvested from a plant that was right next to purple starchy corn. The cross pollination lead to some pretty interesting combos but this was my favorite! The whole cob was yellow sweet except for a single purple starchy kernel!

My first round of Glass Gem Corn has germinated and is growing nicely so here is a throwback to one of my favourite cobs from last year. There are a few main questions that get asked about Glass Gem Corn every time I post on it so here are the answers in advance: 🌿No, it is not GMO 🌿 Yes, it’s edible but you don’t eat it like you would Sweet Corn (well you could but I’ve tried and I wouldn’t recommend 😂) 🌿 Glass Gem can be used for Popcorn and Corn Flour or, of course, saving seeds 🙌🏼 I grow them to use for Popcorn 💚 - @urbanveggiepatch on Instagram
