Is nucao completely vegan? 🌱⠀ ⠀ 👉100%, Tutti Completti and no exceptions.⠀ ⠀ Recently, this question has reached us more and more often. So it was time to settle it once and for all. In fact, we never really had to worry about it, because the answer was always self-evident for us. The question for us is rather: Why NOT purely plant-based?⠀ ⠀ I, Chris, like many others in our team, have been vegan for several years and could of course list many, many reasons why I think this is basically a good idea for us and our planet. ⠀ ⠀ But if I am honest, in 2016, when we developed nucao, that was not yet the case. And yet nucao became vegan. Why? Because we never understood why it takes milk powder to make good chocolate?! 🤨⠀ ⠀ During our trip to our first cocoa supplier on Bali (meanwhile we source from Peru) we got to know the true taste of cocoa beans. There we became aware that this natural product is mixed beyond recognition with milk powder and sugar, only to be sold in our shop as a sweet candy. ⠀ ⠀ We love the real, strong taste of the cocoa bean. And if you significantly reduce the sugar and leave out the milk powder, you are also doing your body a big favour. Because you dont need the cow for our second criterion for the best bar in the world: nutrient density. We prefer to use hemp seeds, tigernut flour or almonds and ensure maximum creaminess by finely grinding the cocoa!⠀ ⠀ So whether vegan or not - nucao is there for everyone - and some who have discovered us on the shelf and have eaten several bars may still not know that nucao is vegan. I ended up in the same audition as @nomadbakerdavid so I like to think that there is no shame in losing out to the eventual winner (also, hes just as nice in real life as he comes across on TV). Anyway, these biscuit bars have been sitting away, on the back burner of my mind, for a year and I finally broke and bought a mould. I had no idea what mould to get so messaged the amazing @bakesbymichelle whose Bakewell bars are the inspiration for these and she got back to me with a brand and everything. These particular bars are very much a proof of concept for me - making sure I understand how I want to make the final ones so the flavours and filling are the final version. These are more like a tunnocks tea cake with chocolate, marshmallow and they worked!! Next step is trying a mousse inside. Im not gonna give the flavours of the real ones Im gonna make away on here as Im followed by some of the people Im going to make them for but Im thinking of changing up the flavour combos in the future. Maybe a pistachio mousse, fresh raspberries and pistachio biscuit all surrounded by white chocolate? How about banoffee with a liquid caramel core? Maybe I would just go for chocolate, chocolate and more chocolate!! Let me know what you think below! Also, in the video, there is a moment when I internally freaked as I set these in the fried and didnt let them warm before cutting so the chocolate shell was SOLID - I thought the knife would go straight through but the well tempered chocolate is a bit harder than I remembered and it took a few attempts!
