A couple of roasted Romano peppers, the last of some feta, a scattering of pistachios and some herbs, that are half way between fresh and dried, made up my lunch today. . . Very simple dish to make, simply roast the peppers with a slosh of oil and a pinch of salt for 30 minutes, then add toppings! INSALATA DI RISO ROSSO E VERDURE Lestate é finita ma nellorto raccolgo ancora qualche verdura estiva; con il piccolo raccolto ho preparato linsalata di riso rosso. Il piatto è molto gustoso, questo tipo di riso è profumato e si sposa benissimo con le verdure. INGREDIENTI: per 3 persone 250 gr di riso, un pezzetto di porro, 2 zucchine, 2 melanzane, una manciata di foglie di basilico, pomodorini q.b., un pezzetto di burro, 2 cucchiai di parmigiano, olio q.b., sale q.b. Versare lolio in una padella, unire il porro tagliato a striscioline, appassire per un paio di minuti. Unire le verdure lavate e tagliate a striscioline, portare a cottura per il tempo necessario. Cuocere il riso rosso, scolare. Versare nella padella delle verdure, aggiungere le foglie del basilico sminuzzate, insaporire per qualche minuto. Spegnere la fiamma, aggiungere un pezzetto di burro, 2 cucchiai di parmigiano, mescolare. Comporre il piatto, guarnire con i pomodorini tagliati a metà. A little bit of sunshine on a gloomy Minnesota day 💛 Tomato season is my favorite season! Weve been growing a lot of tomatoes this year, and these are probably one of the products were most proud of at the moment. Last year we tried this variety with minimal success, but just enough to keep us interested and know that there was demand for it. This year we planted more, and started to prune the trusses while on the vine. The result is beautiful, fully ripened truss tomatoes. It makes us feel fancy growing crops like these. We are so grateful to have restaurants who support us and like all the specialty things. It really makes our jobs way more fun and delicious. Growing up, I hated tomatoes. I’d only experienced the mealy hot house tomatoes available in grocery stores and it ruined my relationship with this fruit. I did everything I could to avoid them in salads, sandwiches and anywhere that they showed up raw and bland. Fast forward to 2011ish, when I woke up on a friend’s NC farm to witness the sun rising through a prolific home garden only to see tiny golden orbs calling out to me. I was so entranced, I didn’t even get fully dressed and headed out to commune with the garden in my underwear- coffee in hand. Glistening in the morning light, I ate tiny Sun-gold tomatoes from vine straight to my mouth and drank coffee in my underwear as I sat in the garden watching the sun rise. Nirvana. It was the purest moment and I swore that I would replicate the experience again one day. It wasn’t until the Covid pandemic descended upon us that I made time in my life to sew the seeds of this far away dream and finally planted a garden on our property. This week, Harley and I woke up early and picked Sun-gold tomatoes in our underwear and all felt right in the world for a half hour. Good tomatoes have that power. Now I’m eating tomato TLC‘s (tomato, lettuce & bbq chips- less meat these days)for breakfast lunch and dinner. I cannot stop and neither has this garden. Keeping up with the daily harvest every day is near impossible for our family of two. Fun fact...tomatoes are botanically a fruit but culinarily a vegetable. Duh we all know this fact but did you know the Supreme Court had to rule this for tax reasons on imports? 1883 the court declared it to be a vegetable as it was generally served with dinner and not dessert. Is it a fruit or a vegetable? I get asked this all the time! So for today’s #sundayscience let’s go back to basics and look at some definitions. Fruits develop from the flower of a plant and contain seeds. This means that Pumpkins, courgettes, aubergines, Luffas, chillis and peppers are all fruits. Please, do not make a fruit salad with them though 😆. A vegetable is any other part of the plant that is edible. For example, Rhubarb, Lettuce, carrots and potatoes. Tomatoes are therefore obviously fruits. Botanically speaking. However, in 1893 a decision was made by the US Supreme Court to classify tomatoes as vegetables for customs purposes. Amongst the fruits there are several different types; Drupes contain a single seed within a hard endocarp, such as cherries, peaches and olives. Berries contain several seeds held within the fleshy pericarp (the tasty bit!) such as aubergines, bananas, grapes and tomatoes. Pomes have a sweet juicy pericarp and an inner core containing several seeds, like apples and pears. Aggregate fruits develop from one flower with many pistils (the lady bits of a plant 😁). There is also a whole set of classifications for dry fruits such as beans, peas, nuts and grains (yes they count as fruits!). So, hopefully now you will be able to tell straight away if something is a fruit or a vegetable! For the record, doing this Instagram page isn’t my job, but I love answering questions. If you’re growing veggies in limited space and think you don’t have room for tomatoes - I highly recommend growing Tiny Tim Tomatoes! 🍅 Tiny Tim is a dwarf tomato - max height is about 2 feet. They produce LOTS of yummy snacking size tomatoes for about 2-3 months and can be grown in a 5 gallon container. 🌱 They are fun to snack on right in the garden, but one of my favorite ways to eat them is to cut them in half, mix with chopped cucumbers, basil, squeeze of lime, salt & pepper for the tastiest garden fresh salad ever! 🥗 I usually start seeds indoors - then transplant seedlings outside to a 5 gallon CaliKim @smartpots when they are 4 weeks old or 4-6 inches tall. Il nostro orto ci regala sempre grandi soddisfazioni. È un piccolo orto ma per noi basta e avanza per avere dei prodotti buoni e freschi. Faccio le melanzane sottolio, i peperoncini al tonno, la marmellata di cipolle o di peperoncini, olio al peperoncino e mangiamo tanti tanti pomodorini; ma iniziavano a diventare parecchi e allora ho fatto la 🍅 #passatadipomodoro 🍅 Finalmente ho trovato una ricetta perfetta per fare una passata con il mio #bimbytm31 : 📝📝📝 Un kilo di pomodorini lavati bene anche con un po di bicarbonato. Versateli nel Bimby e frullate 30sec da 7 a turbo. Adesso cucinate 25min Varoma vel 1 con il cestello al posto del bicchierino. Poi omogenizzate 30sec da 6 a Turbo 30sec. Ed in ultimo, ma solo in ultimo, aggiungete qualche foglia di basilico, sale e olio (Proprio lolio va aggiunto per ultimo perché ossida il pomodoro e lo fa diventare arancione). Versatela calda in un vasetto sterilizzato. Chiudete bene e lasciatelo capovolto e coperto da un canovaccio finché non raffredda, anche tutta la notte. Finally tomato season is here and I’m beyond excited. We are currently under tropical storm watch and I’m collecting as many fruit as I can before it makes land fall. Tomorrow I’ll be pruning and tying them as blight seems to be here as well. It took 4 full months to grow these babies from seed to fruit. Though stuck underwater for a week, being burned by the sun, almost swept away with high winds, our tomato trial survived. 💪🏼 . . In the days before everything shut down here, together with our partner farmers and a leading Rutgers plant biologist who specializes in tomato varieties specific to NJ, we planted seeds that we hoped would be better suited to the changing climate in our region. All while being open-pollinated, and without GMOs. 🍅 . . We’re a few years in on this trial, and we have been waiting for these weeks of harvest to see how they fared. Very, very happy they survived this incredibly tough growing season, which means field tomato growers may soon have seeds that better match our climate, which will lead to less overall preventative inputs. 🌱 . . - @firstfield on Instagram
