When I brew coffee, I don’t start from a standard recipe of mine. Nor do I craft a recipe for each coffee.⁣ ⁣ At a point, those are very helpful things to do.⁣ ⁣ I would describe what I do now as the jazz of coffee or brew improv.⁣ ⁣ When you develop an understanding and intuition around how brewing variables affect taste and extraction and learn how they can be adjusted in relation to each other, you can make decisions on a brew-by-brew and moment-by-moment basis. ⁣ ⁣ My brew moves depend on the profile of the coffee and what I want to emphasize or de-emphasize. That will impact my choice of dripper, water composition, water temperature, grind setting, number of pours, bloom time or not to bloom at all etc.⁣ ⁣ It is a joyful and freeing and adventurous and sometimes disappointing way to brew. It’s funny to look back on pictures like this, we are in the middle of work, loving what you’re doing, and getting to serve people. Then you notice how good your hair looks, and then you think about how shaggy your hair is currently with the inability to get a good haircut.⁣ ⁣ When this picture was taken I gave no consideration to my hair that day. And it’s funny how now with my limited ability to receive a haircut, that’s one of the first things I noticed.⁣ ⁣ So often we have to be removed from some thing in order to recognize its value.⁣ ⁣ While there are so many terrible consequences as a result of COVID-19, we have to acknowledge that ⁣ beautiful consequences are happening too. While this may not be 𝘦𝘷𝘦𝘳𝘺𝘰𝘯𝘦’𝘴 story, we see it’s happening for many of us. ⁣ ⁣ 👨‍👩‍👧‍👦For those of us who worked more than we played, we’ve been given a gift of time with our children and family.⁣ ⁣ 💸For those of us who might consider ourselves to be overspenders, we are learning how to live with less and get by with creativity and ingenuity.⁣ ⁣ 🧶For those of us who’ve experienced significant loss, were able to see our communities rise up to meet our needs.⁣ ⁣ 🕰We are being forced to slow down, and recognize the things that we often so easily and so quickly overlooked. ⁣ ⁣ I’m finding myself being so grateful for a good haircut, for a refreshing drink of water, for that lightbulb over my head that screwed into the ceiling of the house that I’m able to live in. Grown high-up in Colombia’s Cauca region the cherries in this lot undergo a meticulous special fermentation and washing process, involving multiple cycles of precisely temperature-controlled water, before being separated by moisture content to achieve optimum cup quality. . . Because of light fruity and floral notes, I chose the chemex to brew this coffee. @jaymclaughlin_irl and I drank this together and had very different experiences, which is something I love about speciality coffee. Jay found the coffee to have a light and fruity aroma, but it tasted earthy in the cup. The “Skinny Hippie” project came about when Josh Raggio AKA “Skinny” and John Stephens AKA “Hippie” talked about spending a day in the others shop and building a call together. No formal planning, no preconceived design work, just an onsite, organic collaboration between the two. Josh, known throughout the craft for his well made beautiful crafted calls made from exotic burl and dyed woods. John is known for crafting calls from more traditional woods while drawing inspiration for his creations from vintage calls. This first collab was held at the J.Stephens Call Shop on July 30-31, 2020. The two decided to build two calls on this inaugural project that meshed each of their trademark design elements: one standard size call and one oversized call. On the standard call, Josh made the barrel, and John built the stopper. Josh used his signature barrel shape and stippling. The band area was wrapped with a waxed cord by John. То есть, мы грубо говоря, вывариваем кислотность и сладость, а на последней фазе останавливаем экстракцию. ⠀ ✔︎Зачем нужен байпас? -Для того, чтобы избежать переэкстрагированности напитка, а от того и горечи во вкусе; -Если необходимо приготовить напиток по объёму больше, чем может вместить аксессуар (например, аэропресс) для заваривания. ⠀ ✔︎Условия: -Температура воды не должна быть высокой, иначе во вкусе может появиться горечь; -Объём байпаса рассчитывают заранее. То есть, сперва вы определяете какую концентрацию напитка вы хотите получить в итоге, а исходя из этого составляете рецепт. ⠀ ✔︎Однако, у этого способа есть и некоторые минусы: -Послевкусие у готового напитка может быть негативным, будто проваливаться; -Тело напитка не всегда плотное; -Аромат не очень яркий. ⠀ 📌Пример рецепта с байпас: -Кофе: Ява Золотая -Способ: аэропресс, перевернутый -Используем два фильтра (не забудьте заранее смочить и стряхнуть лишнюю воду с фильтра) -27,5 г кофе на 180 г воды температурой 90℃ -Помол: ЕК43 (turkish) 8/11; Comandante (red clix) 46 щелчков -Заливаем (как можно быстрее) 180 г воды. Today is the international coffee day!! Not only that, but kaffenytt has reached 10k followers! Una de las cosas que más disfrutamos es el proceso completo hasta dar con el resultado esperado. Primero la cata, después buscar la receta idónea y luego el proceso de preparar un día si y otro también esa receta. Sin duda todo un ritual, el cual queremos trasladarte este mes de octubre con dos talleres. El primero será un taller/cata donde cataremos varios cafés y donde aprenderás que hay que tener en cuenta a la hora de catar un café. En el segundo taller queremos que aprendas de forma sencilla lo necesario para preparar un café en casa de forma manual “Home Brew de andar por casa” como nos gusta llamarlo a nosotros. Apunta 18 de octubre y 1 de noviembre. Ten en cuenta que debido a la situación actual los talleres tendrán las plazas muy limitadas y que habrá que respetar en todo momento las indicaciones que las autoridades vayan dictando. I’ve been curious about all the coffee and tonic water mixes that I see here so I tried it myself! ⁣ 15g of Ethiopia Sakicha / 55g water, 1:30 minutes / Aeropress + lots of ice + tonic water (idk how many grams, I’m very imprecise, I know). ⁣ The result is practically orange juice (swipe left for the side view — EDIT: I accidentally uploaded three photos, the 2nd side view is a less accurate color representation of how this mix turned out). Legendary duo - the Takahiro kettle and the ROK grinder. It doesnt get any better than this. Almost perfect except two small details - insulation for the hot kettle handle and a lid for the grinder to prevent beans from jumping out like popcorn. I solved both these problems with a little bit of my leathercraft wizardry. I really dig the combination of yellow vegtan leather and black stitching, but other colors are also an option. How about you, does your coffee kettle burn your hand? Are the coffee beans flying out from your grinder? I’ve said it a hundred times and I’ll always say it but @sumpcoffeenashville is like my favorite place in the world. It’s been forever since I’ve had a bag from @sumpcoffee but my friend surprised me with this bag and I was 1000% immediately stoked. It sounded so good.⁣ ⁣ I brewed this up on the Hario V60 first and it was super well balanced. It starts off with a nice bright red apple and caramel sauce flavors. It’s a really creamy coffee with tons of milk chcocolate and honey in the cup. As it cools down it reminds me of like those chocolate covered orange candies! I can’t even remember what they were called lol. It just has that milk chocolate flavor with a nice bright orange undertone. @sumpcoffee @sumpcoffeenashville always release the best stuff. ✨ Simply Sunday ~ bread making ~ “Find something you’re passionate about and keep tremendously interested in it.” - Julia Childs. Thanks to our family friends #TheWoods for this beautiful loaf 🧡 #homemadebread • Simple ingredients for your loaf: bread flour, instant yeast, salt, water. #sallysbakingaddiction 1. Mix the dough ingredients together. Use a spatula at first, then switch to your hands to ensure all of the flour is moistened. The dough is actually a little sticky after it’s thoroughly mixed. Let it rise at room temperature for 2-3 hours. Cover the dough and let it rise at room temperature for about 2-3 hours until doubled in size. 2. Use right away or refrigerate. After 2-3 hours, you can immediately continue with the next step. However, for ideal flavor and texture, I strongly recommend letting the dough sit in the refrigerator for at least 12 hours and up to 3 days. I usually only let it rest for about 18 hours. During this crucial step, the cold air slows the fermentation process and adds so much flavor and texture. So, you can bake bread in 2-3 hours or in 3 days. The longer it sits, the better it tastes. 🙂 3. Shape into 1 boule. Rest as oven preheats. You can shape the bread into a round loaf (boule) or two longer loaves. I usually make 2 longer loaves side-by-side on a flat baking sheet, about 9×3 inches each. Score with a sharp knife or bread lame. Preheat the oven to a very hot 475°F The extremely hot air will immediately set the crust so the bread rises up instead of spreading all over. To help ensure a crispier crust, after the oven pre-heats– pour boiling water into a baking pan on the bottom oven rack. Immediately place the dough inside and shut the oven door to trap the steam. LOW WASTE COFFEEEEE 🤪☕️ awhile back I cut all caffeine out of my life. crazy right? I still don’t drink caffeine, besides the occasional sip I have of my boyfriend’s coffee. I do drink decaf coffee about 4x a week, which still technically has a teeny amount of caffeine, but it is what it is.
