И здесь нам на помощь приходит сливочное масло, которое как бы обволакивает ароматические молекулы, фиксирует их в себе. ⠀ Где и как мы можем воспользоваться знанием этих прекрасных возможностей сливочного масла? 🔸 При приготовлении любого масляного крема добавьте в масло до начала взбивания все ароматические компоненты, такие как семена ванили, цедру цитрусовых, молотые пряности. По мере взбивания масло «поймает в ловушку» все ароматы, и вкус готового крема покажется вам гораздо ярче. 🔸 При замешивании теста для кексов методом «взбивания масла» начните взбивать масло, добавив в него ароматические компоненты. Поверьте, такой кекс будет более ароматным, чем тот, в котором специи будут смешаны с мукой и добавлены в последнюю очередь. 🔸 Если в любое тесто предполагается введение растопленного сливочного масла, смешайте его со специями, пряностями или ароматическими травами и только после этого начните растапливать. Остудите до комнатной температуры и используйте, процедив при необходимости. 🔸 Масляный соус типа голландского тоже можно ароматизировать на этапе растапливания сливочного масла. 🔸 Начните приготовление практически любого жареного блюда с прогревания в сливочном масле веточек тимьяна или розмарина и тонко нарезанного или раздавленного зубчика чеснока. Даже обычный омлет станет вкуснее! 🔸 Мирпуа, соффрито или просто поджарка из лука 🧅, моркови 🥕 и сельдерея есть не что иное, как «операция по поимке ароматов» овощей и передачи их другим компонентам супа или рагу. ⠀ Посмотрите вокруг себя. Started much like a conventional São Jorge but aged for the first 3 months at 14c and 70% average humidity not allowing the rind to harden and developing a natural growth.
