Speri winery has been held by the family for seven generations. This winery, small yet a true hidden gem, produces only five labels all in outstanding quality. The four brothers who inherited the winery in the 1960s thought out to produce true premium wine. First things first, they modernized the winery’s growing environment. They carried heavy rocks to build stone walls to make a terraced landscape, which allowed them to manage the vines as if they were grown on flat soil(p3,4). The Speri brothers also developed an “open-pergola system,” granting wider space between the vines to create better exposure to sunlight and air(p5). They believed the first step to making great wine is to cultivate quality grapes. Therefore, they only used the best grapes from their vineyards and established an organic approach, even though that meant losing a great deal of grapes on the way. ⠀ Having discovered that their Sant’Urbano site(p7) had the best growing environment, they decided only to use grapes harvested in that single vineyard to produce their flagship wine, the celebrated Speri Amarone della Valpolicella Classico Vigneto Monte Sant’Urbano. With that, the brothers’ dream came true after decades of hard work. Their goal was ambitious, yet they didnt forget that basics are all that matters; great wines are made with quality grapes grown in healthy soils. Pigeage is a French word which literally means punching down. It can take place during the first stage of fermentation where the floating grapes are pushed back into the wine for the proper extraction of color, flavour and tannin. It also helps ventilate the wine. Pigeage is considered to be a classic french winemaking method. A process particularly used for making the finest red wines. This can now be done by machine however manual punching is still considered to be the best method and is gentler on the wine. Born of the Sundial Vineyard in Oliver and the Saddle Ridge Vineyard in Osoyoos, this opulent 2016 Syrah spent 16 months in French oak before bottling. A fragrant fluid, it doles out plush aromas of purple berries and violets, vanilla, plum compote, mocha and baking spice. Juicy wild berry dominates the palate and is underscored by savoury flavours. Olá amigos da Confidemus! Nesta última quarta-feira, 16, participamos na Enoteca Permont de Santo André/SP, da degustação da Vinícola Cordilheira de SantAna, localizada em Santana do LIvramento/RS. Os proprietários e enólogos Rosana e Gladistão fizeram uma apresentação em que pudemos conhecer alguns de seus rótulos, como o Chardonnay 2016; o Touriga Nacional 2014; o Merlot 2010; o Cabernet Sauvignon 2013 e o Tannat 2007 - que vinhos sensacionais!!! Os rótulos se mostraram robustos, com excelente corpo, equilibrados e aptos ao envelhecimento ainda por mais alguns anos. A vinícola optou justamente por esse tipo de vinho mais longevo e com personalidade, impressionando a todos os presentes. Mais uma vinícola nacional que produz rótulos extremamente bem elaborados e que colocam o nível do vinho brasileiro em outro patamar. Tonights occasion: 2017 Cabernet Sauvignon by Prolific Vines Vineyard (@prolificvines) Deep, dark, rich color. Slightly warm, restrained nose with notes of blackberries, and subtle dark plum. Terroir is subtle and in the form of a slight sandy, loamy leather. Oak is very measured, and makes its presence known through a very distant licorice and cedarwood. You would likely miss it. Body is precise. Balanced front to back. Fruit is carried over as a slightly dry dark plum. Crisp, measured tannins provide clean structure, creating a classic foundation from attack to finish. Transition to finish is seamless, culminating in a subtle back and forth between creamy and dry tannic grip, ultimately leaving the palate parched. A reminder of its youth. A hint of spice caps the experience. This is more of a nuanced Cab than most people might be accustomed to. I suspect this ultimately has to do with the climate. It does not have the typical overpowering characteristics of say a Northern California Cab (aggressively acidic, tannic, spice). This is a great Cabernet Sauvignon. It is showing surprisingly well for its relatively young age. It should age quite nicely, given more time to further integrate. I would pick up a few bottles. Enjoy one now and revisit this vintage in about 5 years. This is a pre-release look at this vintage. I previously reviewed the 2016 and looking at my notes, the 2017 is very reminiscent of it, surprisingly consistent if not a tad more mature. Unique and unusual, this grape produces juice with a reddish purple hue. ⁣ ⁣ Grape juice from a red or green grape is usually colorless. (Wine gets it’s color from the grape skins). However, this specific grape produces pigmented juice which makes for an inky, luscious, full-bodied red.⁣ ⁣ A little about the vineyard- The name “Nine Oaks” comes from the nine majestic oak trees that grow on the family estate. Organic grapes are used to craft these naturally made wines. Traditional wine making techniques are preserved, including the use of “Qvevri” (hand made clay vessels buried underground) during fermentation. Back in the day wine makers didn’t have temperature control so they would ferment wine underground for a cooler more controlled environment. ⁣ ⁣ A sucker for symbolism this label really speaks to me. If you look closely, you’ll see a “9” representing the nine oaks trees and a “G” for Georgia, which represents the traditional Georgian dance- a line that’s constantly moving and changing. This dance is considered sacred and as are their wines. ⁣ ⁣ I could go on and on about this vineyard and the winemaker but I’ll stop there. Ma l’apoteosi della goduria giunge quando stappiamo “Il Domenico”.⠀ Questo Sagrantino è prodotto dalle migliori uve della vecchia vigna di Colcimino. Il nome è una dedica al fondatore, Domenico Adanti, colui che negli anni ‘60 acquisto la villa sul colle Arquata, ora sede dell’azienda. Ovviamente parliamo di sagrantino in purezza, il cui lungo affinamento passa da 36 mesi in legno e 24 in bottiglia.⠀ ⠀ ⠀ È un vino potente, dal colore porpora intenso. Tra le varie denominazioni, gli IGT sono forse la categoria nella quale ci divertiamo maggiormente a portare avanti le nostre ricerche.🔎 Il disciplinare più permissivo, consente molto spesso ai produttori di sperimentare ed esprimere il massimo di quanto la terra consente loro di produrre. Oggi vogliamo portare sul tavolo una di queste bottiglie. La cantina @santacristinawines è di per sé una garanzia, dal 1946 produttori di vini di qualità, sono situati in un’alta collina della Toscana non lontano da Siena e Perugia. E’ proprio il nome della regione a comparire in etichetta, evidente l’intento di valorizzare il territorio, con ispirazione allo stile francese di portare in etichetta il nome del cru. Toscana IGT 2018 è un blend di diversi vitigni: Merlot, Syrah, Cabernet e Sangiovese. Ogni varietà viene vinificata separatamente in acciaio inox 🍷 👀 Alla vista si presenta rosso rubino con riflessi violacei che preannunciano un vino giovane e fresco. 👃 Al naso sorprende per la sua potenza e complessità, emergono infatti sentori fruttati e floreali, note speziate di pepe ed erbacee come la foglia di pomodoro. Tale varietà di sentori è data probabilmente dalla grande varietà di vitigni che compone il blend (nota speziata dallo Syrah, erbacea dal Cabernet). 👄 La stessa potenza avvertita in precedenza la troviamo anche in bocca, è secco, deciso, con una spiccata acidità accompagnata da una giusta sapidità, un tannino avvolgente ed un tocco di morbidezza dato dall’alcool (13 gradi). Chianti Classico is from that specific area in Central Tuscany, within the Chianti District, a terroir of hills and short montains. The boundaries of Chianti were determined as far back as 1716 (by Cosimo Ill de Medici, Grand Duke of Tuscany). In 1932, the wine designation of DOCG was given to Chianti Classico (a stricter area within Chianti) that sports the black rooster seal on the neck of the bottle (gallo nero). Chianti must have at least 80% Sangiovese grape; and to be called Reserva, it should be aged 24 to 30 months (instead of 4 months and up for regular Chianti). . Common tasting notes: Preserved red fruits, dried herbs (oregano), some red spice, dried salami, small game, firm acidity, balsamic vinegar tones, espresso, sweet tobacco, possible worn leather, medium tannins. . “If anyone orders merlot, Im leaving. I am not drinking any f***ing merlot.”   . You may recall that quote from the movie Sideways.  Do you recall The Hitching Post II that they filmed extensively at?  Honestly, I will have to watch the movie again because I think it has been 10+ years since Ive seen it, but that is how it reached International acclaim in 2004.  However, they have been cooking up delicious BBQ since 1986 at this location and their original location, since 1952.  We all know food by itself is boring, so they created the Hitching Post Winery, so that you can pair different foods and wines, and make it interesting.   . I honestly cant stop thinking about their natural pork baby back ribs.  When they came out, I immediately asked for BBQ sauce, because it looked as if they had forgotten it.   They dont have any and they dont need any.  It has flavors of oak smoke from the open grill and they use their Magic Stuff seasoning.  I need some more Magic Stuff, thankfully they bottle it up and sell it, I am ordering some right now! . As Winter approaches in Australia, how about a classic Italian dish matched with a Barbera D’Alba from Piemonte? 🍷🍴 This 2012 Piero Busso Barbera @piero_busso was the perfect match🍷. . . . Just the right age with rich flavours of cherry and plum and a hint of spice to complement the richness of the meat balls in a beautiful tomato based sauce. No further description required! 🍅 😋 🍷. 🍷 Like Nebbiolo, Barbera is a native variety of Piemonte, but much more forgiving and less sensitive to adverse vintage conditions. Production is in greater quantities making it an affordable everyday drinking alternative to the superb Pier Busso Barbaresco, saved for those special dining occasions. This ‘Majano’ Barbera, is sourced from two Piero Busso vineyards near the beautiful village of Neive. 🍷 🍷 I enjoyed this wine and food recently in Melbourne, having acquired it from a nearby fine wine merchant, but in 2015 was fortunate to visit L’Azienda Agricola Piero Busso and taste their portfolio of wines in the company of Pierguido and Emanuela Busso, but more about that in another post. 🍷🇮🇹🇮🇹. What is your favorite region in Bordeaux? ... ... I have been struggling with this question for years and still yet to reach a conclusion, especially around delicious and exceptional vintages like the 2010. So this Pomerol was described as a great value Pomerol from this vintage. And to be honest I tend to agree that this wine is lovely yet still needs some time to reach its peak. The nose opens with lots of black currents, black cherries, cranberry, prune, sweet spice and licorice, the body is full with dry firm tannins that need a nice decant to soften and welcome you in , the finish is long yummy and lightly chewy. Definitely a keeper, a shame that the first bottle of my case was corcked, fortunately number two was splendid. Visitei, semana passada, o mítico Château Pétrus, tão famoso por sua qualidade como por seu preço: trata-se do merlot mais caro do mundo. Quase impossível conseguir uma garrafa por menos de mil Euros. Muita gente me pergunta: por que é tão caro? Quem paga isso tudo por uma única garrafa? Simples: é a lei do mercado que dita o preço. Por acaso esse vinho é duas vezes melhor do que seus concorrentes diretos? Claro que não. Mas quando se visita Pétrus - o que eles raramente permitem - vê-se o quão pequena é a propriedade. Então trata-se de um vinho muito muito muito bom cuja pequena produção não é suficiente para suprir o mercado. Resultado? Os preços altíssimos. A impressão, ao visitar Petrus, é de uma vinícola típica da Margem Direita, como tantas pequenas propriedades da vizinha Saint Émillion. É até bem mais simples, na aparência (uma construção sóbria e pequena) e no modo de receber, do que muitas outras. O enólogo, o Olivier Berrouet, nos recebeu de jeans e botina. No chai (adega) o pessoal estava fazendo a remontagem (tirando o mosto da parte de baixo da chuva para regar o chamado chapéu - a crosta de sólidos que se forma no topo). O encarregado do chai está lá há uns 30 anos. Obviamente, trata-se de um processo super artesanal mas, como tantos, eles dizem que a maior parte do trabalho é feito na vinha, e que uma vez que as uvas chegam à adega buscam fazer o menos possível, perturbar o mosto o mínimo possível. Enfim: como não sou nem serei nunca compradora de Pétrus, poder provar uma amostra do fim da visita é uma sorte. E minhanossasenhora que maravilha que estava! Some winemakers may choose to inoculate with yeast cultures to start fermentation or for desired effects certain yeast strains may have on a wine. ⁣⁣ ⁣⁣ 🍇✨ Fermentation Vessel - winemakers can choose from a whole range of vessels for fermentation⁣⁣ Steel tanks (the easiest to clean!), Concrete tanks (allow for the tiniest bit of micro-oxygenation),Concrete Eggs, Oak barrels (barrel fermentation gives a softer, rounder mouthfeel & texture), amphorae...⁣⁣ ⁣⁣ 🍇✨ Cap management ⁣⁣ As CO2 & heat are released during fermentation, the grape skins are pushed to the top of the wine, forming a cap. Punch downs or pump overs are used to wet the cap & ensure the grapes skins stay in contact with the juice. ⁣⁣ ⁣⁣ Pump overs are a bit more gentle, taking juice from the bottom of the tank & pumping it back over the cap. Piegage is also a gentler form of punching down, using your feet to break up the cap. ⁣⁣ ⁣⁣ Punch downs/pump overs are usually done 2x per day AM & PM, depending on the winemaker’s goals. Temperature & brix measured 2x daily to monitor fermentation. When I want a full-bodied Pinot Noir I look to Santa Barbara County. I can always count on wines produced from Belle Glos. Since I enjoyed the Dairyman so much, I decided to open the 2016 Clark & Telephone Pinot Noir. It has deep ruby in colour with aromas of lavender, raspberry, cherry, blueberry, and baking spice. 2018 EXTRA MILE FOCH HARVEST NOTES This wine is a product from twenty-five-year-old vines from Hugh & Mary Vineyard and fruit from premium growers in the Thompson Valley. The fruit was picked at the end of October under clear blue skies. Can you think of a better way to spend a fall day in the Okanagan?! Not a chance. WINEMAKER’S NOTES We are big lovers of Marchel Foch (even though it is not the easiest to make). These grapes were crushed and destemmed and then left to cold soak over several days. The must was fermented in small individual 3/4 ton lots until halfway to dryness, before being pressed in our half-ton basket press, and left to finish fermentation in American oak. This Extra Mile release of our 2018 Foch was the best three barrels of the bunch. The wine was barrel aged for 16 months before bottling. TASTING NOTES Aromas of chocolate, vanilla and coconut coupled with a round, rich palate make this the kind of full bodied wine that will keep you coming back for more (and more, and more). Flavours of blackberry, plum, and hazelnut pair well with a great cut of meat and a whole lot of Leonard Cohen. This is the wine you’ve been training for. ABOUT THE EXTRA MILE COLLECTION It’s never crowded on the Back 40 and the same goes for the extra mile. That’s because it’s not easy to go above and beyond. The thing is, if you’re not willing to settle for less than greatness, there really is no other option. Estas aún tienen bastante impregnándolas(sobre todo si no se estruja la uva al principio o si se trabaja con raspón). After weeks of maceration that follow the alcoholic fermentation, when the wine in the making is ready to be aged, the cellar master launches the devatting stage.The day before, the free-run wine is taken out of the tank and on the day, we enter the tank to take out the grape pomace... with a fork. Physical work ... but always in a good mood to beat the record of 42 minutes to devat a tank of 294 hl ! Then, the grape pomace will be pressed. ------------------- Après les semaines de macération qui suivent la fermentation alcoolique, le vin en devenir est prêt à partir en élevage, le maitre de chai lance l’étape du décuvage. La veille on sort le vin de goutte de la cuve pour lentonner et le jour J, on entre dans la cuve pour sortir le marc de raisins… à la fourche.
