BAKED TOFU! This is how I like to prepare tofu before I add it to stir-frys or bowls 😍 INSTRUCTIONS: 👉 Press a block of tofu for at least 30 mins. Do this by wrapping tofu in a cloth and placing something heavy on top. I like to use extra firm tofu. 👉 Cut tofu into desired shapes. I usually do cubes. Place cut tofu into a large mixing bowl. 👉 Add 1 Tbsp olive oil and 1 Tbsp soy sauce to the tofu and stir until evenly coated. Then, add 1 Tbsp cornstarch and stir again until evenly coated. 👉 Spread the tofu onto a baking sheet lined with parchment paper and bake at 400 degrees F for 15 minutes. Flip the tofu pieces (with parchment paper you can just shake them a bit) and bake for another 15 minutes. RECIPE ⁠⠀ ⁠⠀ Cauliflower Steaks⁠⠀ ⁠⠀ Ingredients:⁠⠀ 1 head of cauliflower, sliced⁠⠀ ¼ cup extra olive oil⁠⠀ ¼ cup green olives, chopped⁠⠀ ¼ cup Kalamata olives, chopped⁠⠀ 1 tbsp baby capers, drained⁠⠀ 2 tbsp pine nuts, roasted⁠⠀ 1 tbsp fresh parsley, chopped⁠⠀ 1 tbsp lemon juice⁠⠀ 1 pinch salt⁠⠀ 1 pinch black pepper⁠⠀ ⁠⠀ Method:⁠⠀ ⁠⠀ Preheat oven to 200°C.⁠⠀ ⁠⠀ Drizzle a large baking tray with olive oil.⁠⠀ ⁠⠀ Slice cauliflower into 5-6 thick slices (each about 1 inch wide).⁠⠀ ⁠⠀ Place the cauliflower slices on the tray. 29ème jour - Marathokeftédes (Boulettes de fenouil) Retour dans les Cyclades, ces îles du sud de la mer Egée pour dévorer de délicieuses boulettes au fenouil ! Ce légume est originaire de la Mer Méditerranée et sa culture aurait d’ailleurs commencé en Grèce il y a plus de 3 000 ans. Durant toute l’antiquité, il devient un légume emblématique de la région et sexporte jusqu’en Chine. On le cite dans la mythologie, pour lui assigner des symboles de force ou de virilité, des régions sont également connues pour sa production comme la ville de Marathon (littéralement “plaine du fenouil”). Si le légume est très répandu de nos jours, il reste très consommé en Grèce sous forme de sirop, de dessert mais surtout d’entrée. Ainsi, on y prépare des boulettes frites au fenouil. Ces petits mezzés sont particulièrement savoureux, incluant notamment de la feta ou de l’aneth. Ingrédients 2 bulbes de fenouil coupés en petits dés 2 càs d’aneth ciselée 2 oignons nouveaux hachés 1 œuf battu 80 g de feta 3 càs de farine Sel et poivre Huile de friture Préparation 1. Saler généreusement le fenouil et le déposer dans une passoire. Laisser égoutter pendant 30 minutes. Déposer dans un linge propre, fermer et bien presser de manière à retirer tout l’excès de liquide. 2. Transférer le fenouil dans un bol et ajouter l’aneth, l’oignon nouveau, la feta et les œufs. Bien mélanger puis incorporer la farine au mélange. 3. Faire chauffer 2 cuillères à soupe d’huile d’olive dans une poêle. Déposer une cuillère à soupe du mélange dans la poêle. Cuire pendant 2 à 3 minutes de chaque côté. Im pretending its my Friday on a Monday by enjoying these. 😆😘⁠⠀ ⁠⠀ {serves 4}⁠⠀ ⁠⠀ INGREDIENTS 👇⁠⠀ 2 large sweet potatoes⁠⠀ 3 Tbs Garlic-infused olive oil*⁠⠀ 1 Tbs Cumin seeds⁠⠀ 1 Tbs Paprika⁠⠀ 1 t bs cinnamon⁠⠀ 1/2 tbs sea salt⁠⠀ 1/2 tbs black pepper⁠⠀ 1/2 tbs chili powder⁠⠀ ⁠⠀ ⁠⠀ METHOD 👇⁠⠀ Preheat the oven to 200C⁠⠀ Wash the sweet potatoes and slice them in thick and even wedges (skin on)⁠⠀ In a big bowl add the oil, salt and the mix of spices.⁠⠀ Add the sweet potatoes and toss together until all sides are evenly coated.⁠⠀ Place the wedges onto a baking tray (make sure you arrange them in a single layer)⁠⠀ Bake the wedges for 40min, until they are golden brown and soft.
