To score some plus points Ive made my wifes favorite... Shrimp Scampi Risotto. You know how it goes... Happy wife happy life! This recipe is perfect for the work week dinner, when you come home tired and hungry. Scampi are low in calories but rich in nutrients. Shrimp Scampi Risotto is a light and healthy lunch. Especially if you love seafood. Chop half of a leak or shallot. If you don’t have a leek or a shallot you can use a small onion. In the meantime heat a glug of olive oil in a pan, skillet or a wok. Quickly sauté. Then add 3 minced garlic cloves and sauté it a bit more. Add 350 grams (2 cups) of rice, a pinch of smoked paprika and a teaspoon of paprika. I suggest you use Arborio rice, in my opinion, the best risotto rice. Mix for a minute or two, then add a glass of white wine. Keep mixing until the wine evaporates, then add 400 grams of chopped tomatoes or tomato sauce and a liter (4 cups) of hot water. Season with a teaspoon of thyme and a teaspoon of salt. Cook for about 15 minutes, stirring occasionally, until the rice is almost tender and still surrounded with some liquid. Finally, add 500 grams of Scampi and cook for approximately 5 minutes. If your shrimp scampi risotto gets too thick, add some water. I normally support black businesses but with everything going on these days me and all the people associated with @boston_finest_palates make it a priority to try black businesses. @chef_50 Is a black owned business and i have to say I was very impressed with the food and presentation and atmosphere. I’m not really a fries person but boy I ate dem up so quick, they were salted just the right amount. The restaurant itself is this casual place that you would not think such good food was being made out of. The Owner/chef was such a sweetheart, He answered all me and My friend’s questions And in the end he gave us free corn bread and that corn bread bro... 🤤. it was honey fried, Like I hate dry grainy cornbread But It was so moist on the inside and crunchy on the out. The cauliflower mash tasted just like mash you couldn’t tell it was healthy perfect amount of herbs.
