Chè thái has a very specific flavor, so this wouldn’t be a go-to for me, but it is definitely tasty! . What I think: SO. GOOD.! If you’re not familiar with chè thái, it’s a cold Vietnamese dessert soup that mixes coconut milk with tropical fruit flavors and tons of jellies! Wanderlust did an AMAZING job capturing all the flavors and textures of chè thái. I was impressed! They nailed the coconut-y, jackfruit-y flavor of chè thái and loaded the ice cream with enough jellies (my favorite part of the Vietnamese dessert) with a touch of pandan (think of it as Asia’s vanilla)! 💚 I also appreciated how the flavor wasn’t overbearingly “chè thái” and still maintained its integrity as an ice cream. If you’re new here, let me get you up to speed on what my account is about in one sentence: diets 👏🏻don’t 👏🏻work👏🏻. Studies repeatedly show that restriction leads to increased preoccupation with food, out of control feelings around food, and binge eating behavior. These symptoms are not character flaws or mere problems of willpower (though the diet industry would like you to believe that), these symptoms are actually signs that your body is WORKING. The body has every tendency towards maintaining homeostasis, or physiologic balance. When you try to mess with that balance by restricting, your brain retaliates by ramping up hunger cues. So OF COURSE food is going to be all you can think about; thats your body simply trying to get its basic needs met. On my month-long hike this August, I was reminded how real the effects of restriction can be. On this hike, I was NOT restricting intentionally- thankfully those days are long behind me. However, the nature of a backpacking trip induces an inescapable form of restriction: You pack a certain amount of food for a set number of days and thats all you’ve got. If you feel hungrier for more, or if you’re craving certain food that you didn’t pack, you’re shit out of luck until your next resupply. By the 2nd week, I started experiencing very real food stress. When I reflect on why, the answer is obvious: the variety and amount of food that I had was limited. So what happened when we resupplied on food in town? I felt completely out of control and wanted to gorge myself on all of the things I was deprived of in the woods. This is textbook behavior for how restriction affects us psychologically: We want the things we cannot have, and when we finally allow ourselves to have them, we will likely overindulge. All of this is to say: save yourself the trouble and avoid dieting/ restricting in the first place. The foodstress quickly lifted when I emerged from the woods and returned to society. I am so grateful that this restrictive experience was circumstantial and NOT a product of trying to shrink my body or true food insecurity. I’m Mum to a fabulous little boy who just happens to have Autism & wife to fabulous (sometimes infuriating) husband who we strongly suspect may also have Autism. . Having grown up around disability, our son’s diagnosis was something I was able to take in my stride. My own warrior Mum is the ultimate role model & my sister @ruthmadeley is proof that disability doesn’t define what you can do – she’s pushing boundaries in the most amazing ways. I wasn’t scared for my son’s future but I was unprepared for how my own life would change. Parenting a child with a disability is a wonderful, enriching experience that also brings about challenges. I never EVER thought I wouldn’t work, yet it became necessary to relinquish a very lucrative career to focus on my caring responsibilities & whilst that brought about some financial challenges, it was the mental challenges around that decision which I had to work the hardest to overcome, so I could reach a place of acceptance of my circumstances, myself & my place in the world. . I’ve managed to keep my professional side alive by doing some training in SEND Law, becoming a strong advocate for my son & volunteering to help others as they navigate the system. My journey to stength & confidence in my advocacy for my child hasn’t always been easy. I’ve had to learn through experience the way the SEN system works, accept opinions will differ & learn how to put emotion to one side when negotiating provision. . To help balance a tighter budget I’ve had some pretty great mindset changes on self care & learned how to improve the home for less £. I’ve had to dig deep into my faith & trust that God will provide. . A huge lesson I’ve learned is not just the need to look after myself but how to go about doing it. . I hope to build a positive & empowered community of parents. Few days back I was craving for ice cream so decided to order it. I had heard a lot about an ice cream parlour FLUFF. So I decided why not order it from there. I ordered there Deal 3 which was two double scoop cup for 220 Rs. The flavor I ordered was Strawberry. The order arrived in time but it was melted and the TASTE was AWFUL. Also it was definitely not the flavor i ordered since there were nuts in it and it tasted more like Rose and Pista flavor . I will definitely not recommend it. Better eat it from somewhere else and not waste your money. So today I received a large tip. Huge! I haven’t received a tip like that since I was a teen selling ice cream. Story time👇🏼 Back in the late 80’s-90’s, I sold ice cream on my dad’s truck right in front of the NY Stock Exchange. Good money was made at that prime location and some of the brokers appreciated a kid busting his hump making them their milkshakes. They showed their gratitude with nice tips and man were they huge! After all, these guys were making hand-over-fist money. To them, what was $20,$40,$100 tips?! Nothing-that’s what. Those were the days. What I don’t do, except in the rarest of circumstances, is put a tip jar on our trucks. I’ve never felt comfortable doing that but every once in awhile, someone drops us a few dollars. This season, with the pandemic affecting so many livelihoods, I decided to use any and all tips, toward a pay-it-forward tip jar. Several families have benefited in my town of Piscataway and today, a woman dropped a huge tip. So big I had to ask her several times if she was sure she wanted to do it. She politely said yes and I proceeded to explain to her that although it meant the world to me that she felt the need to give me that tip, I told her I would use that money to cover the costs for whoever wanted ice cream after I left. She said okay and I profusely thanked her for her generosity. Afterwards, I had the pleasure of telling several families that their ice cream was on the house due to this lady’s generosity. The look on their faces was priceless. And of course, some of them decided to join in the pay-it-forward and dropped some 💴. @sojustkissmex3 was one of those that payed-it-forward and for that, I’m super grateful. John Roebling was an engineer inspired by an idea to build a spectacular bridge connecting New York with the Long Island. The experts told him it was impossible, it could not be done; it had never been done before! Luckily, Roebling could not ignore the vision he had in his mind and he shared the idea with his son, an up and coming engineer. He managed to convince his son Washington, that the bridge could be built! Working together for the first time, the father and son developed concepts, hired a crew, and began to build their dream bridge. Unfortunately, John Roebling died before he could see his dream come true. Washington took over, but really soon he got really. However, all was not lost! Washington, suffering from paralysis, deafness and partial blindness, turned the responsibilities over to his wife, Emily Warren Roebling. She took on the challenge and studied mathematics, strengths of materials and she spent the following years learning, assisting her husband, taking his instructions, and supervising the bridge’s construction. 16 years after the first plans were drawn, the Brooklyn Bridge finally and officially opened on May 24th, 1883. Emily Roebling was the first person to cross the bridge in a carriage, carrying a rooster, symbolizing victory, in her lap. Have you guys tried @benandjerrys non-dairy ice cream? 🍦 For as long as I can remember I’ve been an ice cream addict. I’m talking an ice cream cone every single day after middle and high school because the ice cream shop was on my way home from school. 😬 Yeah. It was bad. Once I went to college my ice cream addiction went from 5-6 days a week to 3-5 times a week. Which was progress right? 😅 Keep in mind, all throughout my life I believed I was lactose intolerant because I would be super bloated after eating dairy. But I did it anyway 🤷🏻‍♀️ because I thought the taste was worth it. Needless to say, when I first thought about going vegan I was terrified at the fact I’d never eat ice cream again. After a few days of going vegan I discovered @benandjerrys non-dairy ice cream. 😱 they had so many flavors I couldn’t believe it! The flavors are made with different types of milk, some use coconut milk, some use almond milk, and others use cashew or oat milk. I’ve tried them all, and while they are all so delicious, I think my favorite flavors are the ones made with coconut or oat milk. 😍 The best part... you don’t bloat afterward! 🥳 you can enjoy it knowing you won’t feel so uncomfortable the rest of the day! After a morning at the beach, we cooled off with some ice cream. I got a small ice cream sundae with soft serve ice cream, specifically in the twist flavor. The typical sundae toppings include hot fudge, whipped cream, nuts, and a cherry. I got all of the toppings with the exception of the nuts. I thought that the soft serve was amazing- silky smooth and delicious. The whipped cream and cherry helped too. This portion was pretty big for a small and the price was fair. Finally got to try this dream trio of mine that I’ve been wanting for like a month 🙌🏻 Here’s the scoop: @kgbirri is also a lover of great ice cream so when we heard about the new watermelon taffy flavor at @jenisicecreams we had to get a scoop. We waited for all our fav flavors in the State Fair collection to come out so we could enjoy all the goodness at once 😌 I ended up with a trio in a waffle cone: watermelon taffy on the bottom, sun-popped corn in the middle, and orange blossom chiffon on top! I absolutely LOOOOVE all of these flavors and have literally been dreaming about going back to get some pints.... On Father’s Day, the fam and I went over to @icecreamrollery for some post-hike frozen goodness. Business was definitely good that day so there was a wait, but it was worth it!! Here’s the scoop: Ice Cream Rollery is located in Reynoldsburg and specializes in rolled ice cream and lobster rolls!! 🍦🦞 It is the only Black-owned ice cream shop in the Columbus area (that I know of, please correct me if I’m wrong!) I went with one of their signature rolls, the Berry Blast, and got it with a strawberry base. Strawberry base + strawberries mixed in + strawberries and blueberries on top = my berry dreams rolled into one 😋 It was absolutely delicious and very refreshing after a day spent out in the sun!! Sometimes I blame my mom for my eating disorder. She exposed me to fatphobia and disordered eating from a young age. This blame and anger that I have inside of me has taken a huge toll on our relationship. “How does your mom stay so thin?” I have been asked this question for as long as I can remember. I respond by laughing it off, but what I want to say is “my mom has an eating disorder”. And then I hear my mom asked this same question. “Kelly- how do you stay so thin?!” and she laughs it off. “I exercise” and I want to add “compulsively” “I eat healthy” and I want to add “I don’t want to eat any food that I fear will hurt or challenge me”. I want to say “my mom has an eating disorder”. I want to say “by saying that, you are praising my moms disordered behaviors and unhealthy weight. You are glamorizing my mom’s unhealthy body and beating your own (and many others) down in the process. You are enforcing the belief into me, others, and yourself that thin is good.” Lately I have been working to shift my mindset so that I don’t see my mom as the enemy, and instead her eating disorder. Yesterday I talked to someone on the phone from the Wellness Center at my new school. She asked me a series of questions to evaluate where I am at (in my recovery) and how she could help me. She asked me questions like “how much do you weigh?”, “what have you eaten so far today?”, and “do you get a regular period?”. She read through a list of around 20 questions similar to this and then, after hearing my answers, said “are you sure you have an eating disorder?”. On paper, it didn’t look like I have an eating disorder. My weight is “normal”, I’m eating fairly intuitively, I have my period, and I’m not using behaviors. That being said, I do still have an eating disorder. There is still that voice in my head that walks around with me even if my behaviors are no longer disordered.
