Matcha Caramel Raw Cheesecake I love raw cheesecakes to the point where I have requested them for birthdays for years. The sweet creamy filling with a chewy nutty crust is my ideal dessert. Plus caramel and matcha are a dream flavour combination. I made 10 of these for reason. Serves 10 V GF DF RSF Ingredients: Base: 1 cup medjool dates 1 1/4 cup desiccated coconut 3/4 cup almond meal 1 1/2 tsp coconut oil 2 tbsp maca powder Pinch sea salt Filling: 1 cup soaked cashews 1/4 cup lime juice 1/4 cup coconut milk 1/3 cup coconut oil 1/4 cup maple syrup 1 tsp vanilla extract 2 tsp matcha powder Topping: Blackberries Method: Soak 1 cup of raw cashews overnight. Add the base ingredients to a blender and blitz together. Grease a muffin tray and scoop out the base into the tray and press into moulds. Blend together the filling ingredients. Pour in the filling into the moulds. Refrigerate for 2 hours. Top with blackberries, enjoy! - @emilygracefood on Instagram

I wanted to use as much mint as possible, so I infused my vodka for 24 hours with a bunch of fresh mint. MINTY MULE 2 oz. mint-infused White Hjerte vodka by @laurelcanyonspirits 1/4 oz. fresh lime juice 1/4 oz. @boozybotanicals Rosemary-Mint syrup 3 oz. ginger beer 2 oz. dry-hopped cider Fresh mint + lime for garnish Build in the order listed in a copper mug filled with ice. Because here’s the thing, I’ve done A LOT of Negroni’s, from a low Shochu variation, in a swizzle form and a ton of infusions from chai, coconut and mango. But since I’ve never loved the selection of creme de cacao here, I decided to switch things up with a liqueur I can’t do without; Licor 43. It’s probably the ONE liqueur bottle I actually go through because whenever I ran out of vanilla extract for baking, I throw in a dash of that. It’s now become my baking norm 😂 Plus DELICIOUS in cocktails 🍹 This Negroni isn’t just Chocolate though. To add a bit of acid, and with Strawberry and Campari being a match made in heaven, we have the equivalent of your Strawberry Dipped Chocolate in Negroni form 😍🍫🍓🍓🍓 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Now the thing that got me really pumped was this photo! I photographed this today and the timing was perfect with @stemsandforks and @silvia_salvialimone announced their #colourchallenge. Since I’ve moved, I have not had a moment to get creative in this space, but today I felt inspired. . . WEEKEND VEGGIE HAUL, locally grown delicious September goodies . . 🌱 . Saturday is my favourite day of the week. It’s the day we all head down to the local park to visit the lovely guys @thesussexpeasant and pick our freshly picked, locally grown veg for the week ahead. The kids love it, they get bonus playground time, then we head on over to Eds van and pick whatever fresh fruit and veggies take our fancy - usually accompanied by the hugest loaf of bread my eight year can get her little hands on - pop it all in my canvas tote and head back home, normally nibbling on apples or carrots as we walk☀️ . British produce is in abundance right now, we were like a kids in a candy shop this morning, working our way around picking out goodies for the week ahead. I’m fully taking advantage of this gorgeous Indian Summer sunshine, so picked up some corn cobs, green peppers and violet aubergines to stick on the BBQ, then once cooked will top them with a drizzle of garlic oil, and a sprinkling of freshly chopped chilli and lime. The green beans and broccolini will be charred and added to salads, stir fries and grain bowls and those courgettes will be turned in to a super light salad of courgette ribbons, drizzled with a lemony vinaigrette sprinkled with fresh mint, chillis and topped with some toasted tamari seeds. The cucumber will be shared between the kids lunchboxes, added to carafes of water and smashed & seasoned to add some crunch to my grain bowls. And those tomatoes, if they make it home without being nibbled by my youngest, will be sliced, drizzled with a little oil and topped with some fresh basil leaves, because they’re simply delicious as they are! . I love using flashes but I’m also exploring the possibilities using continuous lights for product shoots since I’m doing more and more film assignments. Using LED:s gives you a really strong high quality light with great control over modeling the scene and setting it up. Celebrating Negroni Week in Japanese fashion! I used the Negroni formula but with spirits from Japan, light and refreshing, rich and savory. A Girl in Kinosaki 1 oz Ki No Bi Gin @takarasakeusa 1 oz Sho Chiku Bai Organic Nama 0.75 oz Cocchi Americano 0.25 oz Umeshu 1 dash Umami bitters Garnish: a slice of plum Nama sake @takarasakeusa is micro-filtered rather than being pasteurized by heat, this gives it a rich flavor profile that is close to its originality. I paired it with Ki No Bi which is also an amazing gin from Japan, distilled from rice. The Umami bitters is one of my favorites. I used to think Umami taste would go well with heavy and strong drinks, while this is true, it is great with opposite flavor such as citrus because it gives the drink depth and another dimension. Just like my little frog friend here, have you also been contemplating why you are constipated? Have you been following a low FODMAP diet but still suffering constipation? The delicious juicy kiwi fruit may be a simple solution to your problem. Struggling with constipation can be a serious issue for people with irritable bowel syndrome (IBS). There are many factors that may contribute to constipation. Some of these reasons may include: - intolerance to FODMAPs - not eating a nutritionally balanced diet containing adequate fibre - inadequate fluid intake - certain medications and or nutrition supplements - some medical conditions causing gut motility issues Studies have shown that consuming two kiwi fruits a day is a very effective strategy in managing constipation. It has been shown that frequency, stool volume, softness of bowel motion and ease of opening bowels have all significantly increased after consuming 2 kiwi fruit a day. It has been proposed that a possible mechanism for kiwi fruit being so effective is that it contains an enzyme called Actinidin. It is thought that it stimulates receptors in the colon and increases colonic motility. Other possible reasons for kiwi fruit helping with constipation is that the fibre in kiwi fruit has a high water holding capacity. They contain 2-3 g of fibre per 100g. This leads to enhanced faecal bulking and increased laxation, making it easier to use your bowels. It is thought that it is both the action of the enzmye Actinidin, along with the high fibre content of kiwi fruit that is so beneficial. Along with being an effective treatment strategy for constipation, kiwi fruit are also low FODMAP and excellent source of vitamin C, K, E, potassium and magnesium. They have sent me a two bottles of gin and two bottles of liqueur, which I can’t wait to try. I’m so keen to try the liqueurs in some cocktails, but I need to wait until tonight’s food shop, as I want to buy some ingredients to make sure I make the best of their drinks that I can. . This brings me to their 5th gin offering which is made with Camomile, elderflower and lemon verbena. I served here with a slice of lemon and some dried juniper. I took the serving suggestion from their website. At first taste I was touched with a subtle floral flavour that was enhanced by citrus. The lemon verbena really came through for me in this refreshing and well balanced gin. Their suggestion of lemon as a garnish worked really well, but as I was drinking it I thought that a sprig of mint would add a welcomed element, so I will try that next time. . Shaun has worked and lived in Ludlow for over 20 years and his love for the area has been put into his gin. He created a gin for the town he loves and created a delicious product that he, and the town, can be proud of. . As I mentioned before, they have sent me a few of their offerings, so keep any eye on my feed and stories to see what I come come up with over the coming weeks. WHAT YOULL NEED: - 3 slices fresh cucumber - 3–4 thin slices fresh ginger, peeled - 4 fresh mint leaves, washed - 1 bottle of prosecco or Cava, chilled - Ice - Large mint sprig for garnish . . INSTRUCTIONS: In tall or oversized glass, add sliced cucumber, sliced ginger and mint leaves. Gently muddle until cucumber and ginger are somewhat broken up. Fill 2/3 of glass with ice. Look at this picture of this bread. It is a close up because I totally bungled the braiding part of my Paul Hollywood’s 8 strand braided bred for the second challenge of the #thegreatinstabakecollab hosted by the wonderful @breadbakingbabe and @yetanotherfoodpage The recipe was straightforward enough up till the braiding part, I couldn’t work it out so ended up just doing a 3 strand braid and put it next to each other. I divided the dough into 2 and made one chocolate, also added chocolate chips to the dough. The bread itself is quite lovely, crusty on the outside and soft on the inside. This week’s theme ‘The Artist’s Way’ for @eatcaptureshare_ challenge is, today, artist, designer and illustrator @charlylpalmer I’m so grateful @thelittleplantation and @foodisourpower have chosen Charly, not because it was easy (quite the opposite) but because I may otherwise go through life just not knowing about him. His work is raw and beautiful and incredibly moving. I read that for a while Charly went under a pseudonym and painted works that were less controlled, abstract and spontaneous. I love this, maybe for reasons different to Charly, but I love the thought of feeling free of judgment and feeling free with art and photography. Maybe I just might follow suit 😊 Of course Charly’s message is far deeper than feeling free with art. It’s about feeling free full stop. I did try shooting today, really I did. But I felt my thoughts were clouded by the deeper meanings of Charly’s work and anything I did felt forced and inadequate. So today’s piece is depicting the relationship between food and people, as the challenge suggested but one I took a few weeks ago but had t yet posted. An abundant table, fresh healthy food and good nutrition is something I work hard to give my daughter, food packed with flavour and goodness, and certainly not to be taken for granted. On my table 2 weeks ago & first jar is almost gone 🥒 I made two different versions for late summer BBQs: 🧄 garlic & dill 🌿 blackcurrant leaves & spices This weekend we had a casual BBQ with a group of neighbors here at the country house. Just a simple gathering before folks head back the busy city routines. We were outdoors and our new terrace is quite big, so there was enough space to take care of the safety distances. I don’t have any photos of the servings, sorry! But trust me that they were delicious. Nothing fancy, though. Quality sausages, beer and summer drinks. I also baked cardamom buns & a friend made us coffee. Another friend brought surprise pizzas. I think I stole an extra slice because the crust was so amazing! We are very health conscious and so try to cut down on our carbs, treating ourselves only on Wednesdays and holidays. Ha ha ha ha... who are we kidding?? We dont try that at all! We love bread, and pasta, and cake and all other carb delights. We love them all so much that one of us (please dont try to guess who) has had to stop buying challah bread because eating the entire loaf in one sitting is kind of the norm. Pacing oneself is hard!! But with no-knead breads you kind of have no choice. Simple to make, they do require many, many hours of passive preparation. Fruity Friday A quick post tonight, to talk about todays unusual garnish- micro melons, also known as cucamelons. . These tiny watermelon looking fruit are grown on a vine and are about the size of grapes. But bite into one and it’s a pure taste of cucumber with a slight sour lime taste. . Even though they are small they pack a healthful punch. They are full of vitamins and minerals, antioxidants and fiber, and are also low in calories- bonus! 🤣 . It was an obvious choice of gin to use- @hendricksgin a classic gin which is served perfectly with cucumber, I cut and froze some of the cucamelons this morning into an ice tray and they worked really well. . I’m pretty sure most people have tried this gin already so there’s no need to talk about how amazing it is! . Thankyou again to @stainesfarmshop these garnishes just keep getting better and better 👌🏼 . So who else has tried these? I’ve heard there’s a gin that uses them 😊 . Интересная история с коробкой мороженного🤪 ⠀ Месяца два тому назад.. ну примерно, пишет мне Свитлогорье, хотим угостить вас мороженкой (ну я гляжу всех угощают, думаю ну ладно). Отвечаю, хорошо, буду рада попробовать. Ну и все, я и забыла. А на следующий день я работала, соответственно дома меня не было, вот тут и начались приключения🤣 Звонит мне курьер, говорит, что через 30 мин будет около дома и нужно спуститься забрать коробку) Я в панике, спускаться некому, свекровь просить как-то не очень, прошу его подняться на второй этаж, ладно.. согласился🤪 Через полчаса звонит свекровь и говорит, что морозилка не работает и мороженное начинает таять🙈🤦🏻♀️ Удаленно решить этот вопрос я не смогла, вернее вызвала мастера, который может придти только утром на следующий день😔 ⠀ Холодильник починили, но мороженное удалось спасти не все. Growing up she made “green drinks”, juice & fresh herbs and leafy greens from the greenhouse. Pineapple juice and parsley was my favorite combination. Ensaladas de Madres 1 1/2 ounces @bacardi White Rum 3/4 ounce @organicmixology OM Coconut & Lychee Liqueur 1 1/2 ounces Verde Pineapple Juice (recipe below) 1/2 ounce spiced simple syrup (recipe below) 1/2 ounce fresh lime juice 1 dash @thebitterqueens Thai Spice Bitters Top with soda water Spiced Simple Syrup: 1/2 cup hot water 1/2 cup sugar 1/8 teaspoon of ground cinnamon 1/8 teaspoon of ground cardamon stir until sugar is melted. In 2017, I attended the raw food institute — a week long immersion vegan detox program. It was one of the most transformative experiences of my life. We followed a protocol meant for deep internal (and spiritual) cleansing. A vegan chef was flown in from California to prepare healing, alkaline food and juices. We practiced yoga and qi gong. We learned about herbalism, self-healing practices, fasting, superfoods, auriculotherapy, essential oils and so much more. Through that program, I started to believe more deeply in my ability to care for myself. I knew that I was equipped with the knowledge and tools to heal and that I had complete control over my own health. We all do. When illness or disease arises, our bodies are speaking to us. When I was in my early twenties, I started to sit with my pain instead of numbing with medication. I allowed myself to really listen and feel. It’s so important that we give our body the nutrients, rest and love it needs so it doesn’t have to work so hard.
