- I’m bursting with pride! What a labor of love — over the past few weeks, my partner and I began our own sourdough starter from scratch (we named it Beatrix). Neither of us had any experience, so it’s been a real journey of learning and trial-and-error.

- Ciabatta, 75% bread flour, 25% fine Durum flour, 80% hydration. Sourdough based, fermented for 24 hours. Baked at 500 for 20 min. Between the sourdough and Durum flavors it is very tasty.

- Combined the rich flavor of rye with the nutty flavor of spelt by 40/60 along with my rye sourdough. The taste is just wow. Goes with savory and sweet. Topping with butter and honey is just out of this world.
