- Iโm bursting with pride! What a labor of love โ over the past few weeks, my partner and I began our own sourdough starter from scratch (we named it Beatrix). Neither of us had any experience, so itโs been a real journey of learning and trial-and-error.

- Ciabatta, 75% bread flour, 25% fine Durum flour, 80% hydration. Sourdough based, fermented for 24 hours. Baked at 500 for 20 min. Between the sourdough and Durum flavors it is very tasty.

- When not running my shop, I am still baking at home. 100% Fresh Ground Local Grain loaf with a soaker if seeds and toasted pecans.


- I told my mom about bread baking thanks to this sub and she got really into it. She got bannetons, a 2nd Dutch oven and here are the latest breads she made! I was worried retirement would make her bored and Iโm so happy she found this hobby thanks to Breadit :)
