🔹Day- 02 🔹Type - Brie Made from unpasteurized cows milk. Country of origin: France. Region: Seine-et-Marne. Family: Brie. Type: soft, artisan, soft-ripened Fat content: 8.4 g/100g. Texture: buttery, runny and soft-ripened. Rind: bloomy. Colour: cream. Flavour: fruity, mild, nutty, tangy. Aroma: pronounced, strong. Vegetarian: no. Brie is the best known French cheese and has a nickname The Queen of Cheeses. Brie is a soft cheese named after the French region Brie, where it was originally created. Several hundred years ago, Brie was one of the tributes which had to be paid to the French kings. In France, Brie is very different from the cheese exported to the United States. Real French Brie is unstabilized and the flavour is complex when the surface turns slightly brown. When the cheese is still pure-white, it is not matured. If the cheese is cut before the maturing process, it will never develop properly. Exported Brie, however, is stabilized and never matures. Stabilized Brie has a much longer shelf life and is not susceptible to bacteriological infections. Brie is produced from the whole or semi-skimmed cows milk. Rennet is added into raw milk and heated to a temperature of 37°C to obtain the curd.  The cheese is then cast into moulds, several layers of cheese are filled into the mould and then kept for around 18 hours. After this, the cheese is salted and aged for a minimum of four weeks. Brie cheese is slightly pale in colour with a greyish tinge under a rind. Its flavour varies depending upon the ingredients added while producing the cheese. Brie, one of the great dessert cheeses, comes as either a 1 or 2-kilogram wheel and is packed in a wooden box. In order to enjoy the taste fully, Brie must be served at room temperature. . . . Kali ini kita akan membahas makanan yang sudah tidak asing lagi di telinga kita,yakni tahu Tahu adalah makanan yang dibuat dari endapan perasan biji kedelai yang mengalami koagulasi. Nama tahu merupakan serapan dari bahasa Hokkian (tauhu) (Hanzi: 豆腐, hanyu pinyin: doufu), yang secara harfiah berarti kedelai terfermentasi. Tahu berasal dari Tiongkok oleh seorang bangsawan, cucu dari kaisar Han Gaozu,Liu Bang yang mendirikan dinasti Han bernama Liu An pada 2200 tahun yang lalu (2 abad SM) pada masa dinasti Han. Liu An suka memasak. Pada suatu hari ia punya banyak kedelai di rumahnya. Bosan dengan makanan yang itu-itu saja, Liu An ingin membuat makanan baru dari kedelai. Tetapi ia bingung mau membuat apa. Liu An lalu mengeringkan kedelai itu. Kedelai yang sudah kering ditumbuknya sampai halus. Setelah itu Liu An merebus bubuk kacang itu dengan menambahkan sedikit garam. Tanpa sepengetahuannya, ternyata garam membuat rebusan bubuk kacang jadi padat. Liu An mencicipinya. Ternyata rasanya enak. Liu An memberi nama makanan itu tao-hu. Tao artinya kacang kedelai. Sedangkan hu artinya hancur menjadi bubur. Dari kata taohu itulah akhirnya menjadi tahu. Ada yang mengatakan bahwa tahu masuk ke Nusantara dibawa oleh orang-orang Tionghoa sekitar abad ke-10. Awalnya tahu hanya dimasak oleh kalangan elit saja. Pendapat lain mengatakan tahu diperkenalkan di Nusantara pada akhir abad ke-13 oleh tentara Kubilai Khan yang mendarat di Kediri. Pada abad ke-19, tahu bersama tempe menjadi penyelamat orang Jawa yang kelaparan sampai kurang gizi. Saat itu penjajah Belanda menerapkan sistem kerja paksa. Yaitu memaksa penduduk untuk bertanam tetapi hasilnya digunakan untuk kepentingan Belanda. По мере взбивания масло «поймает в ловушку» все ароматы, и вкус готового крема покажется вам гораздо ярче. 🔸 При замешивании теста для кексов методом «взбивания масла» начните взбивать масло, добавив в него ароматические компоненты. Поверьте, такой кекс будет более ароматным, чем тот, в котором специи будут смешаны с мукой и добавлены в последнюю очередь. 🔸 Если в любое тесто предполагается введение растопленного сливочного масла, смешайте его со специями, пряностями или ароматическими травами и только после этого начните растапливать. Остудите до комнатной температуры и используйте, процедив при необходимости. 🔸 Масляный соус типа голландского тоже можно ароматизировать на этапе растапливания сливочного масла. 🔸 Начните приготовление практически любого жареного блюда с прогревания в сливочном масле веточек тимьяна или розмарина и тонко нарезанного или раздавленного зубчика чеснока. Queso Fresco is a generic name to describe dozens of cheeses made in Latinamerica.
