Have you ever thought of roasting your own hojicha? It’s been on my mind since I saw a horouku (焙烙) tea roaster last year. After months of contemplation, I finally caved because I figured it’s a good way to convert my old sencha into yummy hojicha. Hojicha is probably the youngest tea in Japanese tea history - it was invented in 1920s in Kyoto when tea farmers decided to experiment with the twigs and old sencha by roasting them in charcoal. The result was a huge success as the roasting process altered the catechin and caffeine content which turned it into a much gentler tea (yet with robust flavor) that’s suitable to be drank at all time by all ages. In Japan, you are often served one at the end of the meal. Making your own is actually rewardingly easy. All you need to do is to roast some sencha, bancha or kukicha under low heat for a min or two, and your whole kitchen would be filled with this sweet and nutty aroma. Freshly roasted hojicha has a heavier caramel flavor which gives this already delicious tea more oomph. I also grind it into powder form for making latte and dessert. Yum! It’s about the joy found in gathering for a meal. There are many reasons why to choose clay as cookware. On the one hand it is the artistic value of a cooking vessel that doubles as a serving dish, as well as the cultural connection to truly ancient cooking traditions. For the past 20,000 years, people have depended on it as a fundamental building material for shelter and tools. But perhaps most crucially for humankind, clay became cookware. Around the world, clay is still used for specific dishes whose qualities cannot be replicated with metal cookware. Clay pots fell out of favor as metal became cheap and plentiful, but the two materials are not equivalent. Clay cookware heats up more slowly and evenly than metal and holds and distributes heat more diffusely. Those qualities make it ideal for several cooking techniques and dishes: simmered soups and curries, braises or tender baked meats, as well as evenly and perfectly cooked rice or beans. Food cooked in a clay pot stays moist and hot, so generally less liquid and fat is necessary. .
