Woke up this morning and made waffles for the kids. I wanted to add some veggie boost in there so I blended some spinach with the milk and made the waffles green. They both didn’t seem to mind! 😝Here is the recipe again! I didn’t add any sugar or salt. My daughter dipped hers in a little maple syrup and my little one had his with eggs and yogurt mixed with fruit! . Green Waffles: 💚1 cup of whole wheat or spelt flour 💚1 cup of unsweetened almond or oat milk 💚1/2 cup of spinach 💚2 tsp of baking powder 💚2 tbsp of coconut oil or organic butter 💚1/2 tsp of vanilla extract 💚 1 egg . Directions: In a medium mixing bowl, combine all the dry ingredients together. In a blender, blend the milk and spinach together well. In another mixing bowl, separate the egg white from the yolk and beat the egg white until soft peaks form. Combine all the wet ingredients except for the egg white, together and then add to the dry. Last, carefully fold in the egg white into the batter. . So, here is a little reminder on how different savory and sweet can be. . Savory on the left: 2 eggs omelette with mushrooms and tomato, tuna salad with corn, onion and coriander, smoked chicken breast, lettuce, tomato and grapefruit ✔️ . Sweet on the right: 3 pancakes, 1 classic French crepe with blueberry jam, banana compote and nutella ✔️ . Both options are fine, this post doesn’t encourage you to chose any, however if you have a specific goal in mind or you avoid any type of macronutrients, it’s good to know what’s on your plate. . Savory option is 550 calories with very good macros. I love it because it fuels my body with the right amount of protein and fats in the morning. I have lots of energy after eating this combo, it keeps me full longer, I crave food less throughout the day and I can save my carbs for later 🍣🧁😁 . Sweet option is 1100 calories that mainly come from carbs and fats. It’s full of sugar (109g 👀). It will make me feel sleepy right away and although the amount of calories is doubled comparing to savory one, I will be hungry earlier (it’s protein that helps you feel full longer and here you have only half of the amount of protein compared to the option on the left). So, as my brain mostly wants the savory option, my heart usually reaches out for the sweet one and that’s OK. Being on holidays should be relaxing and no additional stress over the food choices is needed 🙌🏼 A few days of overeating won’t ruin your progress 😎 It’s all about balance ♥️ PS. I then sealed the pockets with the end of a fork and popped them in the oven for 10 mins to crisp. For the curry I used 100g soy mince, some grated carrots, peas, courgette and spinach with tomato purée and curry seasoning! I served the pockets with the remaining curry and some extra spinach ✨Dessert: I had @breyersdelightsuk vegan chocolate hazelnut ice cream with frozen berries and I also made a hot chocolate using 1 cup almond milk heated in the microwave, 1 tsp of cacao powder and sweetened with 1 drop of a @myproteinuk whites chocolate flavour drop ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✨Dinner: I baked some tofu, polenta chips, Portobello mushroom and sweet pepper, served with kale, red cabbage, broccoli and green beans ✨ I’ve never tried polenta before, so I thought I’d give them a go = 🤤🤤! ✨ For dessert I made a one serve fudgy ball using 10g @myproteinuk powdered peanut butter, 5g agave nectar and 5g cacao powder, mixed with 3 tbsp water to form a ball. I’m just dreaming of summer since it’s still freezing here 🤦🏾♀️🙄. One of my absolute favorite salads alongside my favorite fish - I’m one happy chica 🤗! Mixed greens topped with fresh strawberries, crumbled Gorgonzola cheese, dried cranberries and raisins and slivered almonds. Yum 😋! I use either raspberry or balsamic vinaigrette for the dressing.
